brakes replaced

I just replaced the brake pads (first time brake jobs on the car)
Here there are 2 questions:
1) should the rotors be polished or skimmed?
2) should I do bedding? How is it exactly?

It's iron rotors.

I always have the rotors turned on at least the first pad change. Many pads are now so rough on rotors they wear more than in the past, so it also serves to ensure your rotors are still within wear limits and that there has been no incurable heat warping.
