Did you send your fob to Eric in France to see if he could recover the data written on the EEPROM in the fob? If he can read it, he can then copy it to a working fob and you will be set. Let me know if you need contact information.
Otherwise you have two options, buy a complete new alarm set, which includes a new Alarm ECU, new immobilizer, and three new fobs with PIN and that set will already have the PIN and fob IDs in the ECU. Or you can buy a used alarm set, which I would not do unless you also get the PIN. All alarms from the F355 5.2- the 575 7.1.1 are the same so any will work. You would probably have to swap the Motronic ECUs side to side to make either work.
You cannot remove the immobilizer and have her run. She looks for an alarm good signal from the Alarm ECU before starting and that comes from using the fob to disarm the alarm and immobilizer.
If Eric can recover the data, have him make two fobs and then rotate them almost daily so the rolling codes do not get out of synch. Do not carry both of them in your pocket, as you discovered.
