There are some folks on FerrariChat that love Henk's mousehair (HVL - Exclusive Italian Interiors) for re-covering the dash.
I got ahold of some today and wanted to post a photo of it. I obtained this from a high end upholsterer who has done work for Tom Shaughnessy.

The original mousehair / mousefur material was flocked Dino vinyl while Henk's seems to have no flocking but a travel weave through the material. In addition the base is not vinyl and the backing is felt.
